Bordeaux is not one place and has never behaved like one. The gravel banks west of the river ripen Cabernet Sauvignon; the limestone plateau east of it belongs to Merlot; and the city between them spent three hundred years selling both.
The estates that will actually sit down and pour for six people are rarely the ones on the labels you know. Those are the ones we went looking for. Two visits and a long lunch is a day; the tram from the city reaches the first of them.
