Nobody thinks about the barrel until it is the only thing left to think about. Around sixty per cent of what you taste in a Scotch whisky came out of the wood.

The yard

We break down, repair and re-char casks for distilleries up and down the Spey. Four coopers, paid by the barrel, working to a rhythm that has not changed in a century.

Visiting

Ear defenders provided; it is genuinely loud. We finish in the warehouse, tasting from casks at different ages so the wood makes its own argument.
