We grow the barley in the field behind the still house and malt it on the floor above it. There are perhaps a dozen distilleries left in Scotland that can say the second half of that sentence.
It is turned by hand with a wooden shiel, four times a day for a week. It is slow, hot work and it changes the spirit in ways we are still arguing about.
Small groups only — the malting floor holds eight people and no more.
