Two of us, one still, and a grain contract with a farm eleven miles east. We mill on Mondays and distil the rest of the week.

The mash bill

Our bourbon runs 70% blue corn — it costs more and yields less than yellow dent, and it carries a roasted-corn sweetness we have not found anywhere else. The rum is single-origin sorghum syrup, fermented on wild yeast for six days.

Visiting

Tours run through the working floor. It is loud, it is hot in July, and you will taste something straight off the still.
